Vegan Christmas Recipes

This Christmas, with the rise in veganism, many people will be attempting to have their first vegan Christmas. Animal rights group Viva! have produced a recipe book full of vegan recipes to help out.

Cranberry ‘Boursin’ Style Cheese

SERVES 8 | 15 MINUTES (PLUS 4 HOURS SOAKING AND SETTING TIME)

Ingredients

  • 85g cashew nuts
  • 125ml unsweetened plant milk
  • 2 tbsp tahini
  • 3 tbsp lemon juice
  • 10g nutritional yeast
  • 1½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tsp salt
  • 250ml boiling water
  • 2 tbsp agar powder
  • Handful of dried cranberries
  • Decoration: freshly ground black and pink peppercorns and sage leaves (optional)

Method

  1. Line a large pudding basin (around 650ml) or similar sized container of your choice (to use as a cheese mould) and leave some hanging over the edges. Set aside.
  2. Soak the cashews for a minimum of 2 hours. Drain and rinse thoroughly.
  3. Blend the cashews, plant milk, tahini, lemon juice, nutritional yeast, onion powder, garlic powder and salt until smooth. Set aside.
  4. In a jug pour the 250ml of boiling water over the agar powder and stir through until the powder has dissolved.
  5. Add this to the cashew mixture in the blender and give a quick whizz until combined.
  6. Stir through a handful of dried cranberries and then pour the mixture into your mould. Leave to cool for 20 minutes before transferring to the fridge.
  7. Leave to set for a minimum of 2 hours.
  8. Decorate with peppercorns and sage.
